Ral 3000 offers a direct, convivial, vibrant cuisine, with a primal charm and innovative outlook. It is a personal imprint on dining, a place for sharing and discovering a deeply unique and exquisitely original character. Fire is the cornerstone that creates, animates, shapes, and guides the entire concept. Our kitchen does not use gas; instead, it employs live fire cooking methods and professional tools that use charcoal and various types of wood, refining primal techniques (such as hay smoking, cooking under ashes, direct contact with glowing coals, or in the live flame) and enhancing an unmistakable authentic flavor. The menu is creative, essential, and straightforward, offering cuisine made of balanced contrasts and exciting flavors that go straight to the point—very genuine, very primal, very true. The focus is on the quality and seasonality of raw materials, the enhancement of local products, and the search for small, passionate suppliers, with a particular emphasis on alimurgy (the use of wild edible plants). The kitchen is located in full view at the center of the venue, surrounded by a welcoming counter that offers an extraordinary view and the opportunity for interaction and exchange with the chef.
